Smokehouse-Style Spaghetti Sauce

This is the kind of recipe you keep for a busy evening: a jar of tomato sauce, a pound of Garfield’s Pork Sausage, and a pot big enough to bring them together. Browning the sausage first adds savory depth, while a short simmer gives the sauce time to pick up every bit of flavor.
The original Garfield’s sheet kept the idea simple, and so have we. Use a tomato sauce you already enjoy and Garfield’s Pork Sausage. Spoon it over spaghetti, call everyone to the table, and let an easy supper be enough.

Directions

  1. BROWN Break the pork sausage into small pieces in a large skillet or saucepan. Cook over medium heat, stirring and breaking up the pieces, until cooked through. Check that the sausage reaches 160°F with a food thermometer.

  2. DRAIN Carefully drain excess fat. Keep the browned sausage in the pan.

  3. SIMMER Add the pasta sauce and stir well. Warm over medium-low heat, stirring occasionally, until the sauce is gently bubbling and hot throughout, about 10–15 minutes.

  4. TOSS & SERVE Meanwhile, cook the spaghetti according to its package. Drain and toss with some of the sauce, or spoon the sauce over individual portions. Serve the rest at the table.
